Chipped Beef (AKA SOS)

Ingredients

(2 ounce) package dried beef
1⁄4 cup butter
1⁄4 cup flour
2 cups milk
1⁄8 teaspoon ground pepper

Instructions

Cut beef into ribbons or pieces.

Melt butter in pan on medium heat.

Mix in flour and pepper with a whisk or fork.

SLOWLY add milk, mixing constantly.

Bring to simmer and add beef.

Simmer for five minutes.

Serve over toast.

The Verdict

This part was written by my dad: 

Kids were overheard saying — uh, that looks disgusting. Seconds later no sign of their hobo biscuits and gravy could be found. They devoured this treat up like the conductor was coming to punch their ticket, and they had to snatch up their bindle and switch trains might quickly!

For me this one brings back great latch-key kid memories. We used to get it frozen. Simply heat up a bag and pour it over toast. I enjoyed making it from scratch. Chipped Beef, SOS, or Shi . . . SHHHHH on a Shingle. Whatever you call it, it’s pretty yummy!

Variations

We did add a little more flour to thicken the sauce. We also added way more chipped beef. We used the jar and deli types as a combo. Feel free to use a much healthier deli meat of your choice. It’s still really good. You can also pour it over rice instead of toast.
